Quorn Hunt Pie

from Gladys Cooper, 1st Lady of Quorn.

Ingredients

8 ozs short crust pastry, 
8 ozs sausage meat, 
1 chopped onion, 
1  fresh tomato, 
1 finely grated carrot, 
1 fresh egg, 
seasoning to taste & a little chopped parsley for garnish.

Method

( A flan fin is ideal for the pie.)

 Line the flan tin with half of the pastry (reserve the other half for the topping on the pie).

Fry lightly sausage meat with the chopped onion. 

When cool spread evenly over pastry, & add grated carrot.

Slice the tomato and arrange over the sausage meat.

Pour over the mixture the well beaten egg. 

Place the remaining pastry on top of the pie, and bake for 20 to 25 minutes at Gas Reg 7.

Serve hot with vegetables or cold with a salad.
