Tagliatelle with Quorn™

Preparation Time: 15 Minutes
Cooking Time: 15 Minutes
Serves: 4

Ingredients

2oz pitted black olives
half a red chilli
2 garlic cloves
7 level tbsp chopped fresh basil
1 tbsp low calorie French dressing
1 level tbsp pesto sauce
1oz freshly grated Parmesan cheese
1 level tsp grated lemon rind
salt and pepper
7oz dried tagliatelle or linguine
2 tbsp olive oil
175g Quorn™ mince

Method

1. Halve the black olives, deseed and chop the red chilli and garlic .

2. Place the basil, low calorie French dressing, pesto sauce, Parmesan cheese, lemon rind, chilli and garlic in a bowl and stir well. Season to taste.

3. Place the pasta in a large pan of boiling, salted water, return to the boil and cook for 8-10min or until tender. Meanwhile, heat the olive oil in a large frying pan, add the Quorn™ mince and fry for about 5min or until warmed through.

4. Drain the pasta and return to the pan. Toss in the Quorn™ mince and basil mixture. Serve at once, garnished with the black olives.
