Oriental Quorn

Preparation Time: 1 Hour 15 Minutes
Cooking Time: 12 Minutes
Serves: 10 Portions

Ingredients

1lb Quorn Pieces
4fl oz soy sauce
1" piece fresh ginger root, grated or finely chopped
Ground black pepper
2 small bunches spring onions, trimmed and chopped into 1" lengths
4 tbsp vegetable oil
4 peppers (assorted colours), sliced
4oz blanched almonds or cashews
4 tbsp dry sherry
10fl oz vegetable stock
1 tsp sugar
2 tsp cornflour

Method

1. Prepare the marinade by mixing 6 tbsp of the soy sauce with the ginger and black pepper. Add Quorn pieces, mix well and chill for 1 hour.

2. Heat 2 tbsp of vegetable oil in a wok and stir fry the Quorn and marinade for 4 minutes. Remove from wok.

3. Add the remaining oil and stir fry the spring onions and peppers for 2-3 minutes.

4. Add the almonds or cashews and continue to stir fry for 1-2 minutes.

5. Return the Quorn mixture to the wok.

6. Mix the sherry, stock, sugar, cornflour and remaining soy sauce together. Add to the wok and stir until the mixture thickens and the ingredients are coated with the sauce.
Serve with noodles or fried rice.
