Quorn™ Korma

Preparation Time: 10 Minutes
Cooking Time: 55 Minutes
Serves: 5 portions

Ingredients

1lb Quorn™ pieces, defrosted
4 tbsp vegetable oil
2 large onions, chopped
4 cloves garlic, crushed
2 tsp ground coriander
1 tsp each ground ginger, turmeric and cumin
1/2 tsp ground cumin
1 1/2 pints vegetable stock
4 tbsp tomato puree
4oz creamed coconut
5fl oz thick set natural yoghurt
Salt

Method

1. Heat oil and fry the Quorn Pieces, onions and garlic until onions soften.

2. Add spices and fry for 2-3 minutes, stirring. Add stock, tomato puree and salt. Cover and simmer gently for 40 minutes.

3. Crumble creamed coconut and stir into korma. Add yoghurt 1 tbsp at a time, stirring.

4. Adjust seasoning if necessary.

5. Re-heat gently before serving.

Serve with plain boiled or pilau rice.
