Chilli with Baked Potatoes

Preparation Time: 10 Minutes
Cooking Time: 35 Minutes
Serves: 4

Ingredients

1 teaspoon olive oil
1 small onion, finely chopped
2 fresh chillies, de-seeded
6oz chopped mixed peppers
1tsp sun-dried tomato paste or tomato puree
12oz Quorn™ mince
14oz tinned chopped tomatoes
1 teaspoon mild chilli powder
Salt and pepper to taste
6oz tinned red kidney beans, drained
4 Hot Baked Potatoes

Method

1. Heat the olive oil in a non-stick pan and gently cook the onion, with the chillies for 4-5 minutes until softened.

2. Add the tomato paste, the chopped mixed peppers and the chilli powder and cook for a few minutes.

3. Stir in the Quorn™ mince and mix to coat evenly.

4. Add the tomatoes, kidney beans and bring to the boil.

5. Seaon to taste.

6. Reduce the heat and simmer, stirring occasionally for 20 minutes.

7. Once cooked, add the chilli on top of a jacket potato and drizzle with some fromage frais.
