BBQ / Grilled Rabbit

Serves 4

Ingredients

4 leg joints rabbit
1/2 pint orange juice
4 tablespoons olive oil
2 garlic cloves
1 tsp. paprika
1/4 tsp. pepper

Method

Mix the orange juice, garlic and paprika together in a bowl big enough to hold all the rabbit.

Marinate the rabbit in the orange juice mixture for at least three hours in refrigerator.

Grill rabbit 5 to 7 inches from coals/grill being careful that fire is not too hot.

Brush with the marinade and grill for 20 - 35 minutes turning frequently until golden brown and tender or until the juices of the meat run clear when skewered.

(Note: Since rabbit has so little fat in the meat, it must be cooked over low heat or it will be tough. If you can hold your hand near the grill for a count of 3-5 seconds, the fire should be about the correct temperature).
